CHILE PASILLA

The pasilla pepper is a type of chili used in Mexican food. It has an earthy flavor with some sweetness and smokiness, yet not much heat or spice to it at all. Mildly spicy, it can be found in the pantry of many homes and restaurants alike because its unique flavor pairs well with beef, chicken, or seafood dishes. It's also used to make mole sauce which typically contains chocolate and nuts like almonds or pecans for added richness.
